Menu Plan – mostly grain free
With it being busy garden/preserving season I have fallen behind on planning and preparing meals. This has meant more grains the past week or so, at least for the boys. They don’t mind, so I will keep soaked oats and millet on the menu at least for their breakfasts. For some reason my husband doesn’t want to be anywhere near a smoothie. Perhaps I have smoothied him out.
Spinach and lettuce are taking up the bulk of our csa box, so their are plenty of salads in the mix!
Monday
- breakfast: oats
- dinner: barbecue chicken salad with better barbecue sauce
- prep: grocery shop, strain chicken stock, rotate kefir, make extra bbq sauce, start garbanzo sprouts
Tuesday
- breakfast: fried eggs, fruit
- dinner: oxtail taco lettuce cups, beans, salsa, raw cheese
- prep: soak millet in morning, put oxtail in crock pot, rotate kefir, order milk, check kombucha, start millet before bed
Wednesday
- breakfast: overnight millet (in crock pot)
- dinner: southwestern egg scramble, coconut flour pancakes
- prep: make triple batch of pancakes, make yogurt starters, pick up csa share
Thursday (our anniversary)
- breakfast: nut and seed granola with fruit and raw milk
- dinner: burgers, salad, green beans with tomatoes (or other veg from csa), grain-free strawberry pie with whipped raw cream
- prep: make pie and whip cream in morning, chop veggies, refrigerate kombucha
Friday
- breakfast: coconut flour pancakes, eggs
- dinner: sprouted hummus platter with veggies and grain-free flatbread
- prep: make hummus and flatbreads in morning, pick up milk
