Early Summer Menu Plan and Food Roots Anyone?

It’s been a while since I shared one of our menu plans. We have been visiting the farmer’s market and harvesting a few goodies from our own garden.
Our lettuce has been a real winner this year. We are eating salads daily, in many forms and loving it. I’m also getting some fresh oregano, thyme, sage, and scallions from our little "farm".
Speaking of farms and markets… is anyone interested in participating in Food Roots again this year? Last year it was so fun to share our adventures in eating locally and homesteading. Please let me know in the comments if you’d like to see that again.
I suppose all that’s left to do is share our menu. Our four year old and myself are still on a modified version of the GAPS Diet – no grains, sugars, beans, or dairy for us.
Monday
- breakfast: eggs fried in pastured butter, apple slices, bacon
- dinner: grain-free pizzas (cheese free for those who need it), salad with homemade dressing
- prep: soak pinto beans, start sprouting brown rice, start creme fraiche
Tuesday
- breakfast: smoothies: raw milk, yogurt, coconut milk, coconut oil, frozen berries, egg yolks, soaked raw walnuts.
- dinner: Grass-fed beef burgers, roasted beets, potatoes, parsnips, and carrots, salad with raw blue cheese and homemade dressing
- prep: soak oats
Wednesday
- breakfast: coconut flour pancakes
- dinner: Southern Style Braised Greens topped with fried eggs, red potatoes with butter and herbs, salad with homemade dressing
- prep: pick up milk from farm
Thursday
- breakfast: eggs + bacon. yogurt.
- dinner: Taco Salads: Grass-Fed beef, slow cooker pinto beans, sprouted brown rice, tomatoes, homegrown lettuce, creme fraiche
- prep: cook extra beef for following day
Friday
- breakfast: coconut flour pancakes with pastured butter, fried eggs
- dinner: Out (our anniversary)
- prep: bulk food pick up
