10 Ways to Eat Through That Windfall of Zucchini
It’s that time of year again – when summer squash is either plentiful in the garden or your neighbors are bringing it over in abundance. Either way, it can be hard to come up with ways to use it all up beyond just shredding it for zucchini bread.
So I did a little brainstorming over at the Plan to Eat blog and shared Ten Ways to Prepare this plentiful vegetable. Make it the backbone of your dinner or bake it up in a grain-free bread, either way there are lots of delicious ways.

I only planted one zucchini plant so I’m not getting a windfall. I like your pizza idea. I’ll have to try that some time. I know it gets old but my favorite is to saute in lots of butter and or coconut oil. I also like adding fresh herbs, whatever I have.
We also like to cook in our crockpot or roaster oven (used for baking, not just for meats) on the back patio. I save meals that require indoor baking for the “cooler” days (when it’s only 104-105 instead of 112 š ). We also do lots of skillet meals. We eat some salads but it’s not a favorite around here. š Though we love to grill, we don’t do much this time of year because we don’t want to stand out in the heat that long…so we mainly do that in the cooler seasons.
